It's Cucumber Time!!

So far, my posts lately seem to be about the abundance of whatever vegetable happens to be picked that week - and I wouldn't want to disappoint, so here we go about cucumbers!

I personally love cucumbers in a fresh tossed salad - but the husband isn't quite as big a fan, so we had to come up with another way to utilize all these cucumbers.

We both love a cold cucumber salad on a hot summers day, so the quest was on to find the perfect recipe.  A lot of cucumber salads call for a significant amount of sugar to help mitigate the tang of the vinegar, so that was something we were trying to be mindful of.  The following recipe turned out to be our favorite.  I've got nine quart jars of this salad in the refrigerator right now!   (I have not been able to find a way to hot water bath process these - so they will just have to stay in the 'fridge)

1/4 cup cold water
