We tried our hand at tomatillo's in the garden this year - and were not disappointed! We currently have an abundance of the little buggers, so we decided to try making a salsa verde - which really is nothing more than a green hotsauce, a condiment for burritos, tacos, etc:
Ingredients:
10 Tomatillo's, husked and rinsed
8 Serrano chile peppers, sliced
1 onion, chopped
1 tablespoon chopped garlic
2 tablespoons salt
water
We started with tomatillo's from the garden and husked and then rinsed them
Next, we sliced serrano chile peppers, also fresh from the garden
Then we chopped some onion
And some garlic
And put all four (tomatillos, serrano peppers, onion and garlic) into a large saucepan. Add enough water to cover and sprinkle salt on top
Bring mixture to a boil, and then lower heat to medium low, and cook uncovered until tomatillos are soft and slightly brownish in color - about 20 to 30 minutes. You can add more water to the mixture during the cooking process if necessary to keep the vegetables from burning.
Pour the cooked vegetables into a blender and blend until smooth - and ENJOY!

I did mine by roasting the veggies instead of boiling...turned out super yummy.
