I don't know about you, but we are always buying a 'bunch' of scallions for garnish on red beans & rice, or chili, etc. We snip off a few of the scallions, and put the rest of the bunch back into the vegetable crisper in the refrigerator. The next time we need them, they are all dilapidated and useless.
I recently read a tip about keeping scallions fresh, AND IT WORKS!!! We bought some scallions before thanksgiving for a batch of red beans & rice that we made, and believe it or not, they are still good - at the beginning of February!
Instead of putting the scallions in the refrigerator, simply put them in a quart size mason jar, and put a little bit of water in the jar - just enough to cover part of the bulb. You will need to keep the occasional eye on the water level - but I just put the jar on the window sill over the sink, and I add a touch of water about once a week. We snip the scallions as we need them (mostly for garnish), and the bulb will continue to grow and produce more greens!
