Linguine with Garlic Sour Cream Sauce

Trying a new recipe tonight - hope it's as good as it sounds!  (this recipe is courtesy of Backwoods Home magazine)

Ingredients:
     3 tablespoons organic extra virgin olive oil
     4 cloves organic garlic, minced
     1 1/4 cups organic sour cream
     1/4 cup organic heavy cream
     1 teaspoon organic fresh parsley, minced
     salt (to taste)
     freshly ground black pepper (to taste)
     pinch of organic fresh italian herbs, such as basil, rosemary or thyme
     1/4 cup organic parmesan cheese, grated
     Fresh linguine pasta (we will discuss homemade pasta via another post)

Instructions:
Step 1 - Put 3 tablespoons organic extra virgin olive oil in a small saucepan over medium-low heat and saute 4 cloves organic garlic, until soft.

Step 2 - Remove from heat and smash garlic in olive oil with a fork.

Step 3 - Blend in 1 1/4 cups organic sour cream, 1/4 cup organic heavy cream, 1 teaspoon minced organic fresh parsley, salt/pepper, and a pinch of fresh Italian herbs.

Step 4 - Cook over low heat for 3 minutes, stirring constantly.


Step 5 -  Add 1/4 cup grated, fresh organic parmesan cheese and cook for another 2 minutes until thick and bubbly.

Step 6 - Pour sauce over cooked noodles, toss, serve and enjoy!!!


p.s. - This pasta dish was absolutely delicious!!
