What do you do when your neighbor drops off a huge basket of plums on your doorstep?

You make plum preserves, of course!!!

We decided to give this recipe a try, and we really loved it - so it's a keeper! 

Ingredients:

5 cups plums, pitted and diced
4 cups sugar
1 cup water


Instructions:

Place plums, sugar and water in a medium saucepan over medium heat; stir to combine.



Continue to stir occasionally until mixture comes to a boil.  Reduce heat slightly and stir frequently until mixture reaches gelling point, about 220 degrees F.



Remove saucepan from heat and allow to cool slightly.  Meanwhile, sterilize canning jars and their two-part lids;  I prefer the 'jelly jar' size.  Fill each jar, leaving 1/4 inch headspace, and attach two-part lids.   Gently lower jars into water bath canner.


Cover canner and process for 15 minutes. Remove jars and allow to cool.  Check lids for seal, and store in a cool, dark, dry place.
