We always have refried beans with our burritos - but this time we decided to tackle making them from dried beans. First off, dried beans are less expensive, and secondly, we can control what goes in the refried beans - it's a win-win!!
We bought Eden Organic dried Kidney beans, and the recipe was on the back of the box.
Ingredients:
2 cups organic dried Kidney beans
Water (enough for soaking, and then 6 cups for cooking)
2 tablespoons organic extra virgin olive oil
1 clove organic garlic
1/4 cup organic green bell pepper, minced
1/2 cup organic red bell pepper, minced
1/4 teaspoon salt
1 tablespoon organic jalapeno pepper, minced
1/2 cup reserved bean cooking water
Instructions:
Step 1: Wash beans, cover with 3 inches of water, and soak 6 to 8 hours, or overnight.
Step 2: Remove beans from water - use the soaking water to water plants.
Step 3: Place 6 cups of water and soaked beans in a heavy pot. Bring to a boil. Cover, reduce flame and simmer at least 1 1/2 hours.
Step 4: Heat oil in a skillet and saute onions and garlic 2 to 3 minutes. Add peppers and saute 5 minutes.
Step 5: Mash beans with reserved cooking water. Add all remaining ingredients to the skillet. Saute 5 minutes, mixing frequently until hot. Enjoy!
